Raisins are pretty good. Fresh apples, cinnamon and brown sugar goes well too, especially if you make it hot with milk.

Almonds and hazelnuts are awesome too.

Probably because of ultra pasteurization.

I can't say to be honest. I used my clay pot because my pans have plastic handles, and I'm afraid they would melt in the oven at 450-500 degrees F.

Yes! That's very important. I soaked mine the night the dough was rising. I preheated the oven with the pot in it from a cold oven. When it had reached max temperature, I waited 20 minutes to be sure the pot was also fully warm throughout. I took the pot out and dumped the dough in it. The heat from the pot made it so the dough didn't stick to it.

I cooked the bread for 30 minutes with the lid on, and then 15-20 minutes without the lid.

Yea, they're amazing. Makes a perfect bread, if only you can wait for it to rise properly. The wait is the hardest part to be honest.
