Curious have you tasted side by side examples or is this something you've heard? I'm going to try some side by side blind tasting soon on the next cyser I make. Some hard cider companies I know of pasteurize in the bottle with no ill effect. I like the finer bubbles that last longer in bottle carbing compared to forced carbed.

The thread about says that exploding bottles could happen if you let it over carb in the bottle. With some simple precautions it's really not that big of deal. Lots and lots of people do it and is a common practice.

You are correct. But with that approach you are stuck with whatever abv the yeast stop. High alcohol meads take a long time to age. I like to have more control.
