damnit, i was happy not knowing. i was seriously considering getting the fuck out of nj and moving out there one day since homes and taxes are so cheap (compared to here at least) and there is so much land for me to grow my beer ingredients. i can't live in a house where i'm the minority. fuck that.

this makes sense - i'd also throw in my 2 cents:
as far as hops go, i would add an aromatic hop or maybe a mild citrus hop to go along with it, try it in the last 5 minutes or i'd even say in secondary for dry hopping.. i find cascade to work best for most "hop balancing" i try, and feel it would work best with this galaxy hop... maybe try hallertauer (this used to be my go to since my dad grew them in our backyard years ago, though we mainly brewed darker beers back then it is a very light hop), maybe a sterling or willamette with a low aa%

Nj - trap rock or harvest moon. Both make superb beers but don't bottle.. Go there grab a flight and a bite, and a growler to go :)

If you're looking for bottles .. Cricket hill has a reserve series that's great, river Horse is great but almost PA, climax in roselle park (5 minutes from me) makes great traditional style beers, flying fish is pretty good as well. Boak's monster mash is pretty awesome. We have a lot of great breweries but not many bottle.

it's tallgrass' best offering in my opinion. i wasn't big into their ipa, it wasn't hoppy enough for me... however, this 8-bit pale ale satidfied my hop needs.
