I'm not exactly an expert, just speaking from experience. The main difference is aging, but might also be fat content.

for example I usually keep Tillamook medium cheddar in my fridge and it melts very nicely and only get slightly oily/separated, but with their sharp or white cheddar it separates badly and gets a weird texture.

That's not quite my experience. I mean it's not the best, but even many non-seafood oriented restaurants around here do seafood pretty well.

I've had great meals at many spots like Dirty Dan's, The Cliff House, Big Fat Fish Co, Nimbus, etc. and of course we have the typical Anthony's chain spots that everyone else has and they are pretty solid.

It is well known that cheddar does not melt so well,

Just depends on the type of cheddar. Mild/medium cheddar is generally excellent for melting, but sharper cheddar will simply separate into a mess.

I lived in Daytona for a few years (and I did a fair amount of traveling around the state). My experience with Florida fish tacos is that you can find them everywhere and the pieces of fish are almost always of excellent quality, but nobody really captures the essence of the fish taco properly. there is always something missing or off--whether it is stale tortillas (or even blasphemous flour tortillas), lettuce instead of cabbage, no white sauce, or just bland flavor. I feel like I tried dozens at different places and never could quite capture proper west coast fish taco magic even with primo quality (and often generous portions) fresh fish.

In FL, as general rule, it is best stick to the fish and chips or blackened mahi mahi

Based on my experience with support folks, the beard definitely helped him get the job. Beard length was the biggest indicator of seniority with the techs I know, and the best way to earn their trust/respect was to bring a decent beard to the party.

yeah, I was a bit surprised. But then I realized this wasn't a normal interview, it was done through email correspondence and I can see how easily someone could get a little worked up and carried away when responding about a very personal issue.........

I switch between swing (3-11:30 pm) and graveyard (11:30pm -7:30am) every couple months. It is torture for the first week or so until I get my sleep schedule adjusted.

I don't think there is a secret to it. It helps me to try to start slightly adjusting my sleep schedule before I switch, but I'm not the type of person who can just decide when my body is going to sleep.

What works best for me is just pretending that the time that I have to start is my morning. Meaning, that I try to go to bed about 8 hours before I have to get ready for my shift no matter what time of day that means. That way I am at least not usually falling asleep at work because I'm decently well rested. And I drink LOTS of tea.

Exactly. win-win-win-win situation all around if you ask me. Nobody benefits from tarp covered seats in a semi-packed stadium.

The only minor issue I see is that it would add a little extra cost for printing/distributing the tickets and they would need extra game day personnel but I think those costs would be negligible considering how much good PR that would buy.

You could also go for Buchanan Towers, but they're at the ass end of campus (nice dorms, though).

A lot of people hate on BT because it is so far away from everything but Fairhaven, but they are by far the nicest actual rooms to live in and the only ones with a living roon/kitchenette area. If you ever want to have your own food they are the place to be (you are crazy if you don't--you'll be sick to death of dorm food after a month).

I view the Canadian West Coast beer scene as a natural extension of what's going on in the American PNW.

As someone who has lived in a great beer town about 25 miles from the USA/CAN border (Bellingham, WA) for the last decade +, my impression is that you are right. You guys are just a little behind us, and working hard to catch up. I remember when I was too young to drink in America, but old enough to drink in CAN we'd often head up to go out to bars and I was always disappointed in the price and inavailability of any decent beer. But it seems to have gotten a lot better, and now we even get some decent CAN beers coming down this way instead of just Kokanee, Molson, and PWB360.

Chuckanut is tops for lager/pilsner/kolsch styles if you ask me. Only problem is that it is draft only and because they are from Bellingham they can be hard to get your hands on in most places (not a problem for me, I live within walking distance of the brewpub and Boundary Bay and Kulshan ).

Its funny how locally produced lagers are practically non-existent here. There's like one brewery in my town that has a single Grolsch-style lager which is pretty dope, but this delegation of lagers as fizzy yellow weakling beers is pretty lolwut. All you have to do is look at the German and Eastern European traditions and see how this is bullshit.

It is tucked away in the furthest NW corner of the contiguous USA (Bellingham, WA), but Chuckanut Brewing is a more recent brewery that has excelled by focusing on traditional German/Czech/central European styles and techniques and they've been racking up awards steadily since the day they opened.

As good as they are, they are often overshadowed by more "extreme" local brewers like Boundary Bay but they are exceptional at what they do. They don't bottle though, so they are nearly impossible to find outside of Whatcom County/Bellingham or at good beer bars in the Seattle area, but it's worth the trouble if that is the style you are into. I think their Kolsch is perfect hot day sipper to sit out on their patio in the sun.....

It bugs me that my club does it. They'd rather be able to brag about selling out every game then just get some more butts in seats. At least they keep opening up more and more sections as we continue to keep the seats full.

nope. left over mac solidifies when it cools and makes it manageable to work with. If you use fresh mac it just turns into giant delicious soggy pile of mac and cheese mixed with pieces of bread.

This is also the key to deep fried mac and cheese: you have to let it cool and form into a solid block so you can cut it into squares/triangles/whatever and bread it before frying.

only problem is that part of the bill includes really steep new taxes on liquor to compensate for the lost retail profit margins. In the end, I think that combined with market forces trying to push prices down we will end up about the same but with a much variability since the prices won't be uniform. Some places/items will be more expensive, some will be cheaper.

Very few, and only the ones who refused to adapt to the changing market.

I know many more bar owners who found it to be the best that ever happened to their business. The places that did adapt and constructed/adapted appropriate outdoor smoking areas picked up all the slack.

If you refuse to accept the realities of your ever-changing business environment then you are doomed to fail, smoking ban or not.

maybe it explains why I'd choose a name like that, but I thought it was just because I'm a night person. I typically work graveyard shift and sleep all day.
