Great job with the organization. If you ever are involved in a future retail build-out, I highly recommend using a Tripp Lite enclosure. I started implementing them at our restaurant chain in NYC, and it significantly reduced IT incidents by protecting everything in a lockable box. Well worth the ~300 bucks!

The camera is linked to a POS terminal because it overlays the customer transactions with the video footage in real-time, so you can tell if the employee is ringing up the customer correctly, or stealing. The POS terminals are definitely not storing any video footage, however. That footage is probably stored locally on a DVR. Are you using Micros for POS?
