I didn't have canned tomatoes but fresh ones worked just as well if not better. Put the shrimp in the last 10 instead of 30 min, unless you like rubbery shrimp :). And I used yellow and red peppers instead for a sweeter taste.

Made this over the weekend and it was DELISH - definitely adding this one to my rotation. It's simple, easy and tasty (but not too spicy or salty).

Sadly,, I can totally relate:

The phrase "two week wait" won’t mean anything to people who haven’t struggled to conceive, but those 14 days between ovulation and menstruation took over my life.

I soon found thousands of other women out there like me on the Internet, supporting each other through these 14 days of torment, hoping beyond hope that this month was the month. Instead of working, sleeping or socializing, I’d spend hours in front of a blinking computer screen, screaming "Me too!" and "Yes, I’m bloated!", as comments from other defeated, desperate women popped up in front of me.

I'm obsessed with this recipe, have been studying it (more like salivating) all week and can't wait to finally give it a try this weekend. I think the brown rice will work well and give the dish a nice texture, white rice gets too soggy. Hopefully, I can find lean andouille sausage or maybe chorizo??

for sure...i prefer shrimp, but either chicken or beef would work. marinate, then cook them separately first then mix them back in.
