Gah! You missed out - should have put the veggies in with the chicken. They get covered in chicken fat and herbs. Best roasted veggies ever! Looks great though!

I find that the balsamic is already sweet enough. Had Vadillia on the last burger though!

With the salt & pepper & pancetta, I find that the extra sweetness of the Vidalia is a nice counterpoint.

Gah! SETTLE DOWN BITCHES!

The meat is from my non-chain, long-established, local butcher. They maintain super high quality standards, and grind meat fresh to order. I trust them.

It is also NOT mushy. Only the very small center is kind of soft. The texture of this burger was actually quite firm.

Yeah, I'm confident in my butcher. Not a chain or a grocery store or anything like that. Just a couple guys who run a local butcher shop and maintain super high quality in everything they do.

But if you don't have a good local butcher that you can trust, then no, you should make sure you cook your ground meat thoroughly.

Well, High quality beef, carefully processed, no real concern about bacteria. So can be cooked to a minimum safe temp. No different than eating steak tartare, carpaccio, etc.

Lets flavor of the meat really shine through.

Sorry for the late reply! Most importantly, it involves this:

Imgur, Smoked Spanish Paprika. May be tough to find, dependent on where you are. Then kosher salt, cracked black pepper, oregano, garlic powder, onion powder.

If someone makes fun of you/criticizes you for asking a question, fuck them, they're an asshole. You're trying to learn and/or grow. Anyone in the way of that is not worthy of respect or attention.
