Bolognese Pasta Sauce

¼ Cup Extra Virgin Olive Oil

2 Medium Onions

4 Celery Stalks

2 Carrots

5 Garlic Cloves

1 Pound Ground Veal

1 Pound Ground Pork

½ Pound Ground Pancetta

12 Oz. Can Tomato Paste

1 Cup Whole Milk

1 Cup Dry White Wine

1 Tablespoon Thyme

Salt & Pepper to Taste

Directions:

In a food processor combine onions, celery, carrots, and garlic until finely ground.

In an 8 quart heavy-bottomed sauce pan, heat the olive oil over a medium heat.

Add the ground vegetable mixture to the pan and cook, mixing continually until lightly browned. This may take approximately 12-15 minutes.

Add the ground meats to the vegetable mixture and brown the meat over a high heat. Once brown, drain off excess grease.

Add the whole milk, white wine, tomato paste, and thyme, bring just to a boil, and then simmer over low heat for 1 to 1 ½ hours, stirring occasionally. Season with salt and pepper.

Serve over pasta.
