This is just not true. There no harm in turning a steak to get the extra set of marks. Everyone likes to use this "flip once" line but when you dig a bit deeper you will find there is no basis for it. Where are the facts that multiple flips are bad? There are none. Its a personal preference.

That being said, I turn my steaks twice and flip them once. They are always moved to a part of the grate that is super hot. I like the crossed grill marks and moving the steaks avoids them sitting on a hot spot for too long.

I was thinking the same thing. Not to make light of these F1 guys skills but the car pretty much lifts itself once they place the "jacks" (no guy cranking a floor jack and then picking it up and running around the car and doing it again) and each guy has to remove and replace 1 nut as opposed to 5 nuts. I love the human aspect of NASCAR. F1 is almost pure tech (and money) at times.

I access via Firefox and never had to exit out of anything. When the episode ended there was a radio button to play the next episode. Click and go.

The new interface is sleek. I liked it as soon as I saw it yesterday.

Why not drop the temp on the smoker to time them finishing when you need them? Just let them stay in the smoker at 180 or 190?

Valentina is one of my faves as well. Bufalo (from Mexico, not like Buffalo wing sauce) is the best but hard to find and the bottles are much smaller.

I agree to each his own but I don't think this is the best way to cook a steak. I always use the blazingest heat I can get. Whether is a grill on full blast or a cast iron skillet thats been in the oven and on a burner.

I just love the crust and I rarely have any issues with uniformness or moisture.

Now if you are talking about larger cuts of beef like a roast them I am right there with ya.

They are also very good blackened in a cast iron skillet. If you need a good rub just look up Paul Prudhomme's blackening rub and pick the one you like.

They are no breaded at all.

Oh I know how to do it. Its just so much easier to do after cooking and having done it both ways I don't see a reason to do it before cooking any more. So I was just curious if anyone found the same.

Agreed. Having read the story I was ready for what I knew. That ending made me feel such dread. Even Stephen King said it was far better than his ending. Which was barely an ending at all.

OK BBQ folks...question time. What do you do with the silver skin? I used to take it off before cooking (PITA) but now I leave it on until the ribs are done and its much easier to remove and the ribs seems just as good if not better.
