Don't care for it eh? To be fair the dish doesn't really show the size, there are four full portions. The first time I ever had cliantro/coriander I was in California. I started sweating.. thought it tasted like soap. Over time I grew to love it and even make cilantro pesto.

I've worked through about 15 of the curries so far. The book is immense, and it has taken me a while to acquire a supply of things like black mustard seeds, dried unsweetened coconut, fenugreek, cardamon, etc. In the 15 I have tried I really tried to pick out curries that were very distinct from one another. You will find in the 660 curries quite a bit of overlap, but nearly every curry has a small introduction on how he came about knowing it and that makes it interesting. Have fun! It's quite an adventure!

Very interesting. As with most spices in Indian cuisine there are medicinal qualities. Turmeric for instance has a lot of research surrounding it right now, in fact in the last month they announced a study where in animal trials turmeric boosted the effectiveness of a chemotherapy designed to treat bowel cancer by "100 times". Where did you learn so much about Fenugreek?

A really good cut of steak in a Goan malt vinegar curry with pearl onions and potatoes is outstanding. I grew tired of simple grilled or pan seared salmon. I like curry so it was a good fit. The salmon held its own in the flavor department.

Here's the recipe. Adapted from the book 660 Curries (Raghavan Iyer). His called for Carp Steaks but I wanted the healthiness of salmon and figured it could stand up to the other flavors well. Approx 4 servings.

Ingredients

*1 1/2 teaspoons salt

*1 teaspoon ground tumeric

*4 fish steaks

*2 small red onions.. 1 coarse chopped the other thinly sliced lengthwise

*3 tablespoons of fresh ginger chopped

*3 large garlic cloves

*4 tblspoons of oil

*1/2 teaspoon of fenugreek seeds

*3 scallions cut into 1/4 thick rounds (I used asian spring onions I had already)

*1 large tomato finely chopped

*1 cup of water

*2 tblspoons fresh finely chopped cilantro

*Juice of 1 med lime

Instructions

Combine half of the turmeric with 1 tsp of the salt and sprinkle your fish steaks with the mixture on both sides

Place the chopped onion, ginger, and garlic cloves into a food processor and pulse into minced.

Heat 2 tblspoons of the oil over medium heat and sear the fish steaks until light brown and deep yellow (2-3 minutes or by appearance). Take the fish out and reserve to a plate.

Heat the remaining 2 tblspoons of oil and add the fenugreek seeds cooking until they sizzle, turn reddish brown and have a nutty aroma. Add the minced onion/ginger/garlic blend. Add the thinly slice onions. Cook until the onions begin to lightly brown on the edges.

Sprinkle the remaining salt and turmeric in. Add the chopped tomato. Add 1 cup of water. Cook uncovered until the tomato is tender but lightly firm.

Add the fish back in and lightly baste/cover with the mixture. Now cover the pan and poach the fish until it begins to just flake (5-10 min). Place your fish over basmati rice, then stir in the cilantro and lime juice into the pan. Spoon the mixture over the fish and garnish with fresh cilantro.

Looks good. I often do the same as a meal for one. Orzo is a nice option, along with any nice green veges. I've done rapini.. wilted baby spinach is nice too. Cheers

You are right about the potential for debate. I would say if you feel so strongly about it, instead of taking pot shots at servicemen online, write your congressmen and make sure you educate yourself on policy for any politician you might vote for.

That is not true. The statistics for Iraqi/Afghan casualties include "war related violence" which include suicide bombers, insurgent violence, etc. The people in those countries have been, and continue to kill each other. I am not happy that we ever went into Iraq, but I am not going to assign blame to all of the deaths related to the war to US soldiers.

Actually I was under an incorrect impression that it had a higher smoke point than butter. I know that I've seen olive oil used to avoid butter being burned, perhaps butter will burn before it smokes because of the milk solids? Interestingly according to this list extra virgin olive oil has a low smoke point, but "extra light" olive oil - the kind where it doesn't have as much flavor has a very high smoke point.
