2 minutes is what im shooting for with my bartenders. unfortunately ive got one that was hired on as the bar manager, but was not up to the task. i was put into the position and have really started turning the bar around. im trying to get consistency with our classic cocktail menu and every time we have a complaint its the old bar manager. when i try and confront her she states that her 15 years experience trumps my 7 and that she will continue to do things her way. its very frustrating because i just want people to get good drinks every time.
