No problem. I know it's difficult. I've been on several diets to try and fix the colitis, but nothing works. Sometimes I get crazy and eat things that really set me off because I get depressed or because I feel that I should be able to eat what I want, when I want. Hope you're feeling better today. Do try the lemon water. It might seem silly, but there is science behind it.

Haha, it's just getting ramped up for summer too. There is someone making all the sauces. I drop the pasta, toss in the sauce, and plate.

I do know not to add the starchy, hot pasta water to thin out or bind together pasta in the sauce. I didn't know that al dente is not what I'm going for. Most of our pasta we are pulling under two minutes. There are a couple that go a little longer, but not much. Thanks for the tips.

I am tasting it...every time. Imagine 200 orders come through in one night... sometimes 7+ orders having to be dropped at once and kicked out in succession. I can't taste it every time (although I try to). I need to learn by look and timing when to pull it. I just thought there might be some tell tale signs that it's done. Unfortunately, not all of the pasta floats when done and some that do float aren't done until another 30 seconds after they start to float. Maybe it is just going to take practice and learning when pasta is done instinctively.

Can you go into detail as to what you did? If it's food then your body might be too acidic. Try drinking a lemon's worth of lemon juice mixed in some room temperature water. You can spread out the lemon juice between a couple cups of water if the taste is too strong for you. I have had a lot of success with this in the past. I don't have Chron's, but I have colitis so flairs are similar in nature. Read this when you get a moment to read about alkalizing your body.

I also want to say that I'm not trying to discourage you from going to see a doctor. I am simply trying to help you get some comfort from your flair.

I want to also add that I've been pulling certain pastas a step before al dente so the pasta can cook in the sauce for 30 seconds or so and become one. I honestly just don't have a ton of experience working with fresh pasta.

I don't have Crohn's, I have colitis, but this will still answer your question. My stool is always loose, but sometimes contains solids depending on what I eat. When I have flair ups my stool is very hot and no solids.

I have found a connection between my flair ups and my PH levels of my body. I find that drinking room temperature water (8oz) with three or four wedges of fresh squeezed lemon I can retard my flair ups and cease cramping. If you get a moment, read this website about the PH levels of food. I tend to avoid sugar heavy foods and especially drinks as it will throw my PH into an acidic state. Believe it or not, while lemon is an acid, it turns into alkaline when it metabolizes in our body. It does, however, return to an acidic state once we add sugar (i.e. lemonade). If you want to discuss it further just respond to my comment.

If I could make a recommendation. Get Kitchen Confidential on audiobook. There's just something different listening to Anthony Bourdain narrating the book as opposed to reading it yourself.

It really depends on who we have working with us in banquets as to what sort of cuisine we get. I particularly like a mexican cook that makes some awesome tacos. Here's a photo of some carne asada tacos with all of the standard fixin's (i.e. cilantro, avacado, beans, etc) Sometimes the italian cook throws together some sautéed eggplant and penne with parm. There's an older greek woman who made the best Moussaka I've ever had. The last dish I made was grilled chicken carbonara.

Usually a pasta or risotto of some sort. I work in banquets and there is usually some leftover meat or seafood to do something creative with. We try and keep it simple since we usually don't have the time to be messing around with a meal. The only bad thing is the pasta can definitely make us all want to take a nap directly afterwards.

I suppose you could sneak down after sunset and camp out on a remote area. You might be able to get away with it if you set up in the dunes.

First it depends on what sort of camping your looking for. I don't know any campgrounds that you are secluded from other campers, though you might find certain places in each campground that offer more seclusion. I forgot to also mention that there are also campground peppered throughout South Jersey. They are mainly family owned and many are trailer parks first and campgrounds second. That may sound trashy, but the prices aren't bad and certain ones are near the city if you want to take in a show, gamble, or walk on the boardwalk.

Not on the beach, but they are around 45 minutes to one hour from Brigantine, Atlantic City, Ventnor, Margate, Longport, and Ocean City...all of which have beaches to enjoy.

Depends on where you want live and where you want to travel to. I like Bass River State Park. There's also Indian Branch Park Campground and Egg Harbor Lake Campground. These are all nice places to go and I've personally camped Bass River, but have gone swimming in the Egg Harbor Lake several times. Hope that helps.

And dairy free too. It did help me feel less lethargic, lose weight, and sinuses clear, but didn't effect my colitis one bit.
