I disagree (and so did Belichick and Caughlin). Brady was going to get the ball back, either with ~1 min down by 4 & 1 TO, or with ~0:20 down by 1 with no TO. The second scenario is clearly preferable.

Also, apparently they were clearly instructed to NOT score by the coaching staff.

You can generally find a wine fridge on Craigslist for ~$50. Unless you have a true "cellar" with the right conditions, this is an ideal way to know that they are being stored in perfect conditions.

The idea behind a cellar (beer, wine, or root) is not to have great fluctuation of temp and/or humidity over a short period of time. Obviously, over the course of a year, you would expect some range, perhaps as much as 15-20 degrees unless it is well underground or professionally insulated and temp controlled.

I have a true cellar as well and it drops as low as 42 in winter and as high as 62 in summer, but rarely more than 5-7 or so degrees in a day, particularly if I'm not in there poking around.

Yes, viable arguments. The biggest being that steady is FAR more important than an exact "ideal" temp.

I do think, however, that the warmer=faster argument is questionable. If it were really the case, we'd all be aging at some higher magical temp and enjoying 10 year-old barleywines after just a few years! We are talking about chemical reactions, and temperate affects more than just how fast they happen - if affects WHAT happens.

Personally, I appreciate the precision of the controlled environment at a traditional cellar temp, particularly when I have found my personal sweet spot for a beer and want to be able to hit that consistently.

This TL;DR is it.

Two additional thoughts.

  1. Go in there and kick ass. Let your work ethic and enthusiasm make the people they do pay feel and look like they're slogging it. Make the environment a better place simply by your presence (regardless of the work they let you touch).

  2. Have a shared understanding of the clear, documented, hard-stop timeline for the unpaid internship. Don't let them forget it. Check in with your supervisor(s)/hirer(s) halfway there, three quarters, one-eighth, etc. At those meetings, solicit feedback on your performance, identify opportunities to improve, and, (most importantly) as it gets closer to the end make it clear that you are looking for a full time gig. Request permission to show work form the internship in your portfolio, and use them as references (because theirs is not the only job you are pursuing), and, if you like the place, negotiate your position post-internship. Make it a foregone conclusion that at the end of your internship, you will be well compensated; if not by them then by someone else.

My only caveat would be that long-term aging (3+ years) is really only viable if you have the right environment (dark, consistent temp within 45-60F, consistent humidity below 70% but above ?). Unless it is extreme, less than ideal temp won't do too much damage over 1-2 years, but beyond that it is a crapshoot with poor odds.

If you can spare a little cash, you can usually find a used 12-bottle wine cellar on craigslist for ~$50. This guarantees perfect conditions.

Google it, there is a wealth of information available.
