You're some of the best people to work with. For starters, you're not so confident as to delude yourself from the truth. Nothing worse than having someone ruin $30 worth of porkbelly to make shitty quesadillas packed with Velveeta and corn because their "creative and adventurous side" took the reigns.

But would you have a chance at an executive level? I'd say sure. If you've gotta great memory and can hammer out a nice menu, sure. Ideally, you're gonna want to "put your stamp" all over the dishes, but you don't have to start from scratch on every ... single ... item.

The greatest of chefs' recipes start out from 'hand-me-down' techniques and combinations.

I work with a mixed menu, most of it being fixed ... and about a quarter of it swaying with the best deals on the freshest seasonal foods.
