To celebrate my new bacon, I decided to make a BLT for lunch. Into the pan went the bacon, medium high heat. The first thing I noticed was the bacn stayed flat as it cooked, instead of curling up like the packaged stuff does.
Some onion, tomato, avacado, juice from half a lemon, cayenne pepper and salt went into the blender for a guacamole. Sliced up more tomato and tore off some lettuce. I prefer to remove the seeds from the tomato slices, they don't add much flavor and taking them out reduces the soggy factor.
Instead of regular bread, I threw a pita into a hot pan with a little olive oil to grill for a minute. My timing was perfect as the bacon had just turned the perfect shade of brown, so I patted the grease off with some paper towel and prepared to assemble my perfect lunch.
Pita - guacamole - lettuce - tomatoes - bacon. Add a cold beer and this may be the best lunch I've ever had.
