Post screencaps. Sounds like a problem from when the effect converts the gradient to a blend/bitmap. You may want to create separate vectors from the resultant effects and add the colour by pasting the vectors-with-gradients over the effected text and setting them to color in their Appearance settings.

using 2D shapes to create a 3D text isn't that hard. If you are limited by illustrator, which is very possible, just go this route. It would take you like 15 minutes to do a "big" word like ILLUSTRATION and I can only imagine that theres only room for a very limited amount of 3D text in any design.

Just duplicate the orignal layer. Move the orignal layer to the back, and create shapes that connect the edges. Then to add depth, using shading, create a gradiant of white to black (adjust opacity accordingly) with a multiply blend mode. This method works great for all axis rotation, but obviously cannot be adjusted if you decide at the end you want 6 degrees instead of 5. You just have to eyeball it at first.

I just went with this. The 3D textures don't have the shading a shown, but it looks good enough for the logo. Thank you guys.

yeah, i just reproduced what you explained, dont add the gradient on the text before you do the 3D bevel/extrude. select the faces of the 3D text afterwards (Object>Expand it all again) and apply the gradient over them however you had it before.
