Probably around 1985, I met Justin Wilson in Lake Charles, LA. He was staying at the Howard Johnson's for about a week. My dad was the manager of the hotel at the time. I don't remember what his drink was but I do remember he drank a bottle a day. He was quite a character to have on site and he was very friendly with the maids.. always trying to supplement their income for extra services if you know what I mean. lol

I was chatting with him at the front desk of the hotel one day about cooking and his show etc. and he made one of his famous little statements.. "Never cook with a wine you wouldn't drink!" And then he ordered another bottle of liquor (I wish I could remember what brand) and then wandered off to his room.

I have his autograph somewhere around here in a box..

I've never heard of him until now, but this guy is amazing. I'm watching him make gumbo on Youtube and the first time he said, "onion" with his accent, I about lost it. He's great, and I had absolutely NO idea I could cook a roux that long, to where it get's that dark. No idea at all. Thanks for introducing me to him... "What I'm gonna did"

the accent is fake if you didn't know. I don't know of any of his recipes per se, but I just use my grandpaw's recipes for cajun food.
