That one I always thought was kind of stupid. It's usually posed as "If a rooster lays an egg on the very top of a barn...blah blah blah". Technically, you should go into the joke with the assumption that, somehow, a rooster has laid an egg. I mean, it's not my fault that there's some sort of sexually confused chicken/rooster out there on the barn, I'm just here to figure out which way the egg will roll.

There are 2 white hats and 3 black hats on a table.
Three persons take one random hat each and put it on without looking at it, while standing in line. They cannot see the hats that are left on the table.
The third person on the line - which can see the two in front of them, as well as their hats - is asked whether he can deduce the color of his own hat. After thinking for a while he answers "no".
The others hear his response, and so the second person - who can only see the first one standing in front of him - is asked if he can determine the color of his own hat, to what he promptly answers negatively.

Third person says no, which means that the two hats in front of him are not both white, which means that at least one of the hats in front of him is black. The options for the first two people are WB, BB, BW (in first-second order).
If the order was WB, the second man would see the white hat, realize that there was only one option for his hat (Black) and give the correct answer.
The third man now knows that his hat must not be white (as the options are now BB or BW) and correctly answers that his hat is Black.

The first person's hat is black.
The 7 possibilities are (ordered 1st, 2nd, 3rd) [BBB], [BWB], [WBB], [WWB], [BBW], [BWW], and [WBW]. The only way for the third person to know his hat's color would be if the arrangement was [WWB] (because there are only 2 Ws), so that possibility is eliminated.
So person 2 now knows that the possibilities are [BBB], [BWB], [WBB], [BBW], [BWW], and [WBW]. Each of these combinations has B at least once somewhere in the first two positions. If the second person were to see a W in front of him, he would know that he was wearing the B that needed to be present, which eliminates [WBB] and [WBW].
The first person in line is now left with [BBB], [BWB], [BBW], and [BWW], each of which has him wearing a black hat.
There's probably a simpler way of explaining it, but that's what I wrote out while I solved it. Thanks for the riddle!

Light one end of one rope, both ends of the other. When the fuse burning from both ends dies (30 mins) light the other end of the first rope. From that point until it burns out is 15 minutes (but it burned for a total of 45 mins)

This riddle is usually credited to Einstein, and sometimes to Lewis Carroll, but there's really no way to tell. There have been several different versions over the years, but this is the one I did. Supposedly only 2% of the world's population can solve this, but I think it's just a matter of patience and tenacity. It's the hardest riddle I've ever solved, but also the most fun. Good luck!
