When I posted this I had already polished off 1lb of it in a few hours. I just finished my first plate from the 2lbs I bought this evening.

I get it at Brothers Meats, only location is in Halifax, NS. They were started by poles a while ago and still carry forward the same traditions in how they smoke their meats.

Everything they sell is insanely good. They have maple smoked back bacon, every time of steak you can imagine, at least 8 types of sausages, and I heard they have beef jerky but I haven't been able to find it yet.

But yeah, if you have a polish meat market around like jeangenie18 said go there, or a farmer's market. I'm just lucky that Brother's is so close!

Regarding your eggs: Crack the egg on a flat surface instead of the edge of your pan, then separate the shell as close to the griddle as possible.

And make sure the pan is nice and hot! This will stop it spreading out so much
