Agree 100%... note that if you render it slowly over a low flame, you get some AMAZING habanero infused bacon fat. It is absolutely perfect to cook stuff in; my preference is bacon fried rice or some chicken breasts.

Edit: If you don't have a fresh habanero, even a halfway decent habanero sauce will make a good substitute. Habanero Tabasco is my go-to because it's cheap and easy to find, so I don't feel like it's a waste to dump a quarter of a bottle onto my bacon while it cooks, but every once in a while I like to use an apple cider vinegar based habanero sauce made and bottled at an apple orchard in upstate NY. It hurts me to dump enough into the pan to get the effect I'm going for, but holy shit is it worthwhile once you're eating the bacon and whatever you cook in the grease.
