You have to be careful when getting animal fat to a high temp. It does tend to smoke and flame. If you keep the temp down or if you are rotating what ever is being fried with new going in at intervals, both will keep the grease from flaming up. I use salted lard with just a bit of butter crisco, about an inch deep to fry frybread.

I've been trying to find the smoke point of bacon fat but so far haven't had any luck. All I've found is that lard is at 350 and bacon fat is probably a little lower than that.

I've had it flash before. It will start giving off allot of smoke and strong smell before it flashes.

Actually it was his little brother, he was trying to cook french fries in a pan on the stove top, it caught fire and he shot it with the kitchen sink sprayer. A tard, I know.

I deep fried battered bacon in bacon grease. Yes, really. Just be carefull when heating up the grease. It'll smoke/burn at a cooler temp than crisco and veggi oil.

How about getting super lean hamburger (or grind your own) and cutting it with set-up bacon grease instead of suet. The consistency would be different, but I think you'd retain some bacony goodness in your burger...if it doesn't fall completely apart.

Eggs. We would always save the hot bacon grease in a cup for frying eggs. Please be careful and don't put the hot grease in a coffee cup. I have heard horror stories of people thinking it was their morning coffee. Owch!

I know some high-end restaurants will use duck fat or a blend with other oils to cook fries. I don't see why you shouldn't be able to use pork fat. Fry up a few pounds of bacon, filter the grease, and blend it with another oil or fat.
