YES. The Sushi joint down the street from where I live uses tempura bacon (battered and deep fried bacon) in some of their rolls. Holy shit it tastes good.

Well, I've made "breakfast sushi." It's not really sushi, but bacon + eggs + ketchup inside rice and seaweed is pretty delicious.

Something I like to do is make an inside out roll, filled with bacon and cream cheese, lay it its side, and put a layer of smoked salmon over the top of that. It's creamy, smoky, and delicious. I still have yet to come up with a name for it, but it's pretty kick-ass.

I had bacon sushi in Tokyo. My daughter and I swore it was the best of the two best foods on planet Earth IN ONE FOOD!

It appears that the bacon was boiled rather than fried or was half-fried or something like that. It was NOT crunchy (remained flexible), but WAS cooked.

It tastes good. It's good to have some mayo inside the roll with the bacon, which should be inside the rice which is then wrapped in seaweed. For an extra kick, you can add Sriracha to the mayo.

Would the mayo be used for keeping it moist, or is it more for holding it together? Either way, it sounds like it would be a tasty add-on (the mayo that is, we all already know bacon is all kinds of awesome).

It may not count as "in", but I tried to make KungPao Bacon years ago... and the end result wasn't something I like to think about.

Other than that, I agree... banana custard actually sounds like it would go really well with bacon if done right

SERIOUSLY. I used to think that adding bacon to anything that wasn't a dessert item would make it better. After trying Bacon & Chocolate Chip Cookies, I've conceded to the fact that bacon makes everything under the sun better.

I know in some rolls they bake or scorch the rolls, so if you really wanted some bacon to replace the seaweed, you could always boil the bacon first for about three minutes and then wrap it around the roll (you would probably have to do individual rolls though) and then bake it till the bacon is crispy (Or grill, but I'm not too sure how that would turn out). You would probably need some sauce or mayo for this so that the ingredients inside won't burn or dry out.

And instead of rolling it in sesame seeds you can roll it in bacon bits for that extra bacon flavor. Bacon and rice already go together well when not in sushi. I think you're onto something big here.

I like the rolling it in bits idea! What about the rolls that have tobiko on them, maybe use bacon bits instead? Same idea as the sesame seeds I suppose - either way it sounds great!

Here's something that's good (but not exactly sushi).

Take a large peeled shrimp and green jalapeño slice (no seeds), wrap these together in bacon, put several of these on a skewer, grill, take off grill and sprinkle them with cheddar cheese.
