Bacon - Nuff' Said...

Dear Baconit:I bought thick cut bacon from the local butcher shop today. I will never buy prepackaged grocery store bacon again.

To celebrate my new bacon, I decided to make a BLT for lunch. Into the pan went the bacon, medium high heat. The first thing I noticed was the bacn stayed flat as it cooked, instead of curling up like the packaged stuff does. Some onion, tomato, avacado, juice from half a lemon, cayenne pepper and salt went into the blender for a guacamole. Sliced up more tomato and tore off some lettuce. I prefer to remove the seeds from the tomato slices, they don't add much flavor and taking them out reduces the soggy factor.
Instead of regular bread, I threw a pita into a hot pan with a little olive oil to grill for a minute. My timing was perfect as the bacon had just turned the perfect shade of brown, so I patted the grease off with some paper towel and prepared to assemble my perfect lunch.
Pita - guacamole - lettuce - tomatoes - bacon. Add a cold beer and this may be the best lunch I've ever had.

Guacamole in a BLT; I have have to try that one of these days. Nevertheless, awesome idea of the Pita.

Avocado slices work almost as well, if you don't want to dirty up a blender.

a mortar and pestle work well too, and it's the right way to mash up an avocado :)

I don't like chunks of onion though, the blender makes sure it's nice and smooth.

The key to the best kind of guacamole is not to grind or blend the avocado at all, but to take two knives and slice it up in a bowl a lot, but don't crush it. Mix in some premade pico de gallo or whatever ingredients you want (use a fork). Guacamole's best when the avocado is in small, uneven chunks.

The avocado that I had on hand was so ripe that it basically mushed itself when I took the skin off. But it was delicious, nonetheless.

Hoegaarden is my favorite beer if I'm having one with lunch, or early in the day. It's light, doesn't have an aftertaste to mess with your tastebuds, and refreshes your palate with each sip.

Ahh, I remember the day I decided to get bacon from my butcher. There was only one bacon that I could call superior to it back then, and that was freshly sliced, home made, Wild Boar bacon.

I'm stuck at home. No food, not even a slice of ham for my sandwhich. Outside, the rain is blinding and the mud knee deep. I'm so hungry I can hardly stand it. And then this amazing man reminds me I have think-cut bacon in the freezer, each slice lovingly wrapped in wax paper.

I wouldn't assume a national chain uses the same supplier... even year to year at the same store. Let alone in one region of the country vs. another...
