And too much apple.

I would slice the apple last as to prevent browning. No reason to do it before you cook the bacon.

And duh, don't toast the bread. Grill the whole sandwich so the cheese gets melty. Mmmmm. May require grilling the halves separately since the apple would be best cool and crispy. But the cheese should be a little melty, one way or another.

Funny you should reply to that now. I just had some quality brie and the rind was quite good. Cheapo president brie from the local grocer, on the other hand, the rind is waxy and un-delish.
